Planted on a chalky-clay earth, this Monbazillac Cuvée "Paul" is selectively and second manually harvested, essentially on our old bits of wines. This sorts, particularly minutious, consist in harvesting only the grapes reaching 90% minimum of “noble rot”. The selection of the grapes is very harsh and this allowed us to obtain a high quality juice. This batch became our up of range of the 1998 year. Silver medal to the National Wine Contest of Independent Wine Growers in France . VINIFICATION: Grapes are converted into wine very carefully with slow fermentation at low temperature. At the end of the fermentation, this wine grew up in oak cask for a period of 12 months. DEGUSTATION: The nose is very fresh with flower grades remaining the accacia flower and the genêt. In mouth, the attack is very soft with an growing evolution remaining the exotic fruit and the orange-tree flower. The final keeps a very fresh impression, metholated and a slight taste of vanilla.
